the only information stored on your SIM card is your phone book and your actual cellular service. your phone acts as a host to that SIM card. ringtones are in WAV format. and pictures are in GIF format. those files are too large to be stored on a 128k sim card.
A sim card has limited storage capacity. It saves phone numbers as individual files so if you organize your contacts lists with names, multiple phone numbers, addresses, and notes, when you switch the SIM card to another phone and access the contacts list you will only see Names and phone numbers and nothing else. In order to preserve memory you will also see the same name with multiple entries instead of one name with all of the contact’s phone numbers. Sometimes the card is able to label the numbers to make it a little easier; you may see something like this:

Al 617555-5678(h)
Most SIM cards can only hold 250 numbers so it won’t save everything. I have seen a wierd thing where text messages from people in your contact list get saved. Don’t know how or why that happens.
To make sure your phone list is actually saved on your SIM card, go to your address book options and there should be an option to Copy to SIM.
